Wanted to make easy kimchi. This was close to St Patrick’s Day and head cabbage was .15 cents a pound. Couldn’t resist… bought two cabbages to make head cabbage kimchi. My halmeoni (grand mother) used to make it occasionally when I was a kid (I think it was when napa cabbage was too expensive)
I love it. It’s spicy, crunchy and “squeaky!”
