Korean shaved ice desserts (bingsu) are a fun and delicious way to cool down in the summer. My favorite is the traditional patbingsu with sweet red beans, soft soft rice cakes (injeolmi) and fruits. I’ve been eating it every summer for my whole life!
These small pieces of chewy rice cake are used for making patbingsu and you can usually find them in a Korean grocery store. Each serving of patbingsu usually uses several pieces. When the rice cake mixes with the sweet red beans and cold shaved ice, they get more chewy.
